TOMORI's open-fire dinner

Auberge in the Hidden Valley

A Feast at the Hidden Valley Auberge

TOMORI stands deep in the Iya Valley, one of Japan's three great hidden regions.
A course dinner woven solely from
ingredients this land has raised.

Hikyo × Auberge

Another fine cuisine,
nurtured by the valley

An auberge is, in French, a "restaurant where you can stay the night." The meal itself becomes the reason to travel― a philosophy of dining that TOMORI brings to life deep in the Iya Valley.

Awa Beef, Awaodori Chicken, Awa Bibuta Pork. Tokushima's three proudest brand foods, grilled with care over the BBQ in a full course. With seasonal local vegetables and river fish raised by the valley's clear streams, every plate tells the story of this land.

Dinner

"A hidden auberge in the gorge
── a feast of Tokushima's three great brands"

Evenings in the Iya Valley begin with the finest local cuisine.

Dinner at TOMORI is no ordinary BBQ. As an "auberge" set in a gorge of Japan's three great hidden regions, we present a course dinner found nowhere else, built around Tokushima's three proudest brand foods── Awa Beef, Awaodori Chicken, and Awa Bibuta Pork.

Iya stone tofu, Kamiyama shiitake, Awa Bi-nasu eggplant— ingredients found only in this region lend the course its depth.

Plate after plate, savored beneath the stars. Dinner closes with a "playful dessert" of marshmallows toasted over the fire— the kind of moment that draws a smile of its own accord.

The appeal and craft of
the Awa Bibuta Pork course

Awa Bibuta is a brand pork prized for its sweet fat and tender meat. It carries about 1.5 times the usual oleic acid, and its fat melts at just 29°C. The melt-in-the-mouth texture becomes all the more striking when grilled over the BBQ.

POINT
  • ・A generous spread of cuts to compare—spare ribs, pork jowl, bacon, and more.
  • ・Paired with local vegetables, the meat's savor comes forward all the more.
  • ・Awa Bi-nasu eggplant, meltingly soft with a refined sweetness, is a natural match for the sweetness of the pork fat.
  • ・Kamiyama shiitake are thick and fragrant; grilling concentrates their umami, and paired with the pork they make for deeply satisfying eating.
  • ・Iya tofu's firm bite and honest flavor stand up beautifully to the rich pork, adding depth to the course.

Awa Beef + Awaodori Chicken Course

  • Awa Beef loin / Awa Beef short rib
  • Awaodori Chicken thigh / Awaodori Chicken breast

The appeal and craft of the Awaodori Chicken course

Awaodori is Tokushima's heritage chicken brand—Japan's leading jidori chicken by shipment volume for more than 20 consecutive years. Known for its firm bite and concentrated umami, it grows deeper in flavor with every chew.

POINT
  • ・On the grill, the skin turns fragrant and crisp while the meat stays juicy—made for the BBQ.
  • ・High in protein, low in fat, and rich in inosinic acid, its umami lingers long on the palate.
  • ・Light and healthy, with a flavor favored by women and older guests alike.
  • ・Local ingredients bring a sense of occasion—flavors "you can only taste because you came to Tokushima."
